The Salami Museum is housed in the magnificent cellars of the Castle of Felino. Even if someone identifies it in a bas-relief of the Baptistery of Parma dating back to the 13th century, the first document relating to the salami found in Parma dates back to 1436, when Niccolò Piccinino in the pay of the Duke of Milan ordered “twenty pigs to make salami”. Organised into five sections, the tour begins with the historical evidence of the relationship between Felino and its symbolic product, the second section is dedicated to gastronomy, the third to pork butchery, the fourth tells the story of production technology, the last is dedicated to marketing.
